Oatmeal walnut chewy cookies

Do you love oats just the way I do? I love eating oats in the morning but let’s face it sometimes it can get pretty boring especially the texture. So these are my oatmeal cookies I munch on during the day and even for breakfast because a little sweet cookie won’t hurt right? This oatmeal cookies has the crunchiness of walnuts inside. That’s my most favorite part. You could add in any nuts as you like provided the pieces aren’t too large.

INGREDIENTS –

  • 250 grams Oats
  • 5 Walnuts (crushed)
  • 1 tbsp. Coco powder
  • 1 tbsp. Honey
  • 2 eggs
  • ½ tsp. Baking powder

WHY THIS OATMEAL COOKIE?

  1. Just 2 minutes to bake!
  2. Can be a breakfast cookie too.
  3. Goodness of protein + fiber + good fats + flavor.

DIRECTIONS –

Whisk all the ingredients together until it’s a thick batter.

Spread them on a baking sheet in a round cookie shaped.

See that its 1.5 cms thick so that the cookie feels chewy and crunchy with the walnuts.

Bake it for 2 minutes.

Poke into the cookie and if you toothpick comes out clean your cookie is cooked.
