Hey! This is amazing to serve if you have guests arriving with no time in hand to prepare something damn delicious. This is one super amazing dinner or main dishes ever. The flavor is all in the meat and the broth. Doesn’t this sound delicious already? I’m pretty sure one serving wouldn’t be enough once you start eating. Yes, I’m telling you this with personal experience. Enjoy!
- 1 pack chorizo
- 2 ½ cups Basmati rice
- 1 soup cube (low sodium)
- 1 ½ liter water
- 3 carrots
- 1 capsicum
- 1 Onion
- Coconut oil
WHY THIS MEXICAN CHORIZO RICE?
- Hell delicious!
- 8 ingredient lunch/dinner main
- Super ketogenic cheat meal (please keep quantity in mind while cheating)
- 25 minutes only.
First, in a bowl add water and soup cube a microwave it for 2 minutes. You can do this process on the gas too.
Add this stock to the rice and let it boil until the boil is cooked for about 10 minutes.
When the rice is boiling let’s start prepping up the meat.
Separate the chorizo from the bag, chop it and set aside.
Chop the carrots, capsicum and onion.
In a heated pan, add some oil and drop in the onion.
Saute it for about a minute and add the chopped chorizo.
Pan fry the chorizo for about 10 minutes.
By this time the rice would be ready. Drain the rice and set aside.
Add the cooked rice in the chorizo pan, add the carrots, capsicum.
Mix the rice really well and fry it for about 3 minutes.
I cook it for 3 minutes because I like my capsicum and carrots a little crunchy.
Season it with some Mexican seasoning and serve.
