This is inspired by a dish I ate back in Dubai. I’ve tried to keep the ingredients minimal with maximum flavor. This dish needs just 10 ingredients and the marinade could be used for a spicy chicken fry/bake too. Enjoy
- ½ kg Chicken breast
- 1 tsp. Coriander seeds
- 1 tsp. Cumin seeds
- 1 tsp. Black pepper
- 1 onion
- 5 Garlic cloves
- 1 tbsp. Rosemary
- 6 Tomato (for puree)
- 1 tbsp. Paprika
- Salt to taste

FOR THE MARINADE –
TIP – Dish cooked on high flame for the first half.
Grind salt, pepper, cumin seeds, coriander seeds, paprika and keep half of the ground masala aside. With the other half marinate the chicken and let it sit for at least an hour.
In a heated pot, add some oil, once heated add rosemary. Once you can smell the rosemary add the marinated chicken.
When the chicken starts turning brown add finely chopped garlic and keep sautéing it.
Remember this has to be cooked on high flame.
Now add in the chopped onion and saute.
Now reduce to flame to medium and close the pot for about 5 minutes.
Once this is done add the pureed tomato paste.
Now saute, close it and cook it for about 10 minutes.
